Carrot and Mint Soup

Ingredients:

  • Carrots                  250 grams
  • Onion                   1
  • Garlic                   1 clove
  • Vegetable Stock   4 cups  
  • Kinow Juice         1/2 cup
  • Mint (chopped)    2 tbs
  • Butter                   1tbsp

Method:

  • Heat clarified butter in a pot until it melts.
  • Add carrots, onions, garlic and vegetable stock and cook until tender , then allow to cool.
  • Mix kinow juice and mint then transfer into bowl.
  • Garnish with mint leaves and serve.
Chicken and Carrot Soup


Ingredients:

  • Carrots(boiled)                  4
  • Chicken pieces(boiled)     200 grams
  • Black pepper(crushed)      1 tsp
  • Garlic paste                       1 tbsp
  • Onion(chopped)                1
  • Cinnamon powder             1 pinch
  • Water                                 2 cups
  • Salt                                    to taste
  • Oil                                     3tbsp
  • Fresh coriander                 for garnishing

Method:
  • Blend carrots in blender.
  • Heat oil in a pot and fry onion until golden then add garlic and fry.
  • Add carrots and water and bring to boil.
  • Add chicken, black pepper, cinnamon, chicken cube and salt and cook for 5 mins.
  • Pour into a dish.
  • Garnish with fresh coriander.
