Carrot and Mint Soup
Ingredients:
- Carrots 250 grams
- Onion 1
- Garlic 1 clove
- Vegetable Stock 4 cups
- Kinow Juice 1/2 cup
- Mint (chopped) 2 tbs
- Butter 1tbsp
Method:
- Heat clarified butter in a pot until it melts.
- Add carrots, onions, garlic and vegetable stock and cook until tender , then allow to cool.
- Mix kinow juice and mint then transfer into bowl.
- Garnish with mint leaves and serve.

- Carrots(boiled) 4
- Chicken pieces(boiled) 200 grams
- Black pepper(crushed) 1 tsp
- Garlic paste 1 tbsp
- Onion(chopped) 1
- Cinnamon powder 1 pinch
- Water 2 cups
- Salt to taste
- Oil 3tbsp
- Fresh coriander for garnishing
Method:
- Blend carrots in blender.
- Heat oil in a pot and fry onion until golden then add garlic and fry.
- Add carrots and water and bring to boil.
- Add chicken, black pepper, cinnamon, chicken cube and salt and cook for 5 mins.
- Pour into a dish.
- Garnish with fresh coriander.
